Ingredients

- 2 cups (250 g) cooked lobster meat, chopped
- 4 tablespoons (60 g) unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup (120 g) diced tomatoes
- 1/2 cup (120 ml) dry sherry
- 2 cups (480 ml) seafood stock
- 1 cup (240 ml) heavy cream
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and garlic, and sauté until translucent.
- Add the diced tomatoes and cook for an additional 5 minutes.
- Pour in the sherry and allow it to simmer for 2 minutes.
- Stir in the seafood stock and bring to a boil. Reduce heat and let it simmer for 10 minutes.
- Blend the mixture until smooth using an immersion blender.
- Add the heavy cream and chopped lobster meat, and cook for another 5 minutes. Season with salt and pepper.
- Serve hot, garnished with fresh chives.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- Make sure to use fresh lobster for the best flavor.
