- 1 lb (450 g) ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz / 425 g) black beans, rinsed and drained
- 1 can (15 oz / 425 g) diced tomatoes
- 1 can (15 oz / 425 g) corn, drained
- 2 cups (480 ml) beef broth
- 1 packet taco seasoning
- 1 cup (240 ml) water
- Salt and pepper to taste
- Shredded cheese, for topping
- Chopped cilantro, for garnish
Instructions
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add ground beef, onion, garlic, black beans, diced tomatoes, corn, beef broth, taco seasoning, and water to the slow cooker.
- Stir well to combine all ingredients.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Season with salt and pepper to taste before serving.
- Top with shredded cheese and cilantro before serving.
Notes
- Feel free to add more vegetables, like bell peppers or jalapeños, for extra flavor.
- This soup can be stored in the refrigerator for up to 3 days.
